Beef and Beetroot Burgers

Adding vegetables in at dinner can be easy with some meals, yet definitely harder with others. Once you’ve got the kumara chips on the side, the fat beef patty and those gorgeous sesame buns to make your burger, there is never enough space for the ‘appropriate’ amount of vegetables. Or is this just me?

Well, what if I could tell you that has all changed with these juicy beef and beetroot burgers from Food in a Minute? I have made a few Dietitian-friendly alterations, but check out the recipe below!

Beef and Beetroot Burgers

Makes 8 – Prep Time 15 mins – Cook Time 8-10 mins

Ingredients:

Patty Ingredients:

  • Onion, finely chopped
  • 450g can sliced beetroot, drained
  • 500g lean beef mince
  • 1 cup fresh breadcrumbs (aim for wholegrain!)
  • 2 Tbsp of your favourite chutney
  • 1 egg
  • 8 wholemeal burger buns, cut in half and toasted
  • 1/2 cup chopped fresh parsley, or 2 Tbsp dried

Veggie Topping Ideas:

Lettuce, spinach, tomato, red onion, gherkins, beetroot (if your an absolute fan like me), pineapple, capsicum, avocado, and grated carrot

Method:
  1. Finely chop sliced beetroot and place into a mixing bowl. Add all patty ingredients to the bowl and season with salt and freshly ground black pepper. Mix ingredients together, then form into 8 burger patties. 
  2. Heat a little oil in a frying pan and cook the burger patties over a medium low heat for approx. 4-5 minutes on each side until cooked.
  3. Serve in toasted buns with veggie toppings of your choice!
